Ingredients:
8 Servings
For the stuffed noodles:
1/2 lb. Lean Ground Pork
4 ozs. Shrimp, diced
1 each Egg
1/3 cup Waterchestnuts, finely diced
1/4 cup Cilantro, chopped
1/4 cup Scallions, minced
1/8 tsp Black pepper
1/8 tsp. Salt
25 each Wonton wrappers
2 tsp. Cooking oil
6 each Fresh garlic cloves, minced
1 cup Onion, chopped
1 cup 31/40 size shrimp, diced
6 cups Chicken broth
to taste Salt
to taste Fresh ground black pepper
1/2 cup Scallions, minced
Method:
Combine ingredients in bowl. Mix thoroughly. Portion filling into
wonton wrappers and seal to form stuffed noodles. Refrigerate. In
a soup pot, heat oil. Saute onions, garlic and shrimp. Pour in chicken
broth and bring to a boil. Season broth with salt and pepper. Drop
stuffed noodles into broth. Simmer for 15 minutes Stir in scallions
just before service. Portion into warm serving bowls. Serve immediately.
