Cocoa Fudge Icing

Ingredients:
2 lb. 6 oz.

1 lb. Granulated sugar
5 oz. Corn syrup
4 oz. Water
¼ tsp. Salt
4 oz. Butter
8 oz. Confectioner's sugar
3 oz. Cocoa powder
1 tsp. Vanilla extract
as needed Hot water

Method:
Combine the granulated sugar, syrup, water and salt in saucepan. Bring to a boil, stirring to dissolve the sugar. Boil the mixture until it reaches 240 degrees F. While the sugar mixture is cooking, mix the butter, confectioner's sugar and cocoa until evenly combined at low speed using the paddle attachment of the mixer. Slowly pour in the sugar syrup. Mix in the vanilla. Mix until the icing is smooth and creamy. Use while slightly warm.
