INGREDIENTS 4 SERVINGS
8 slices White sandwich bread
2 tsp. Butter, softened
8 slices Smoked ham
4 slices Swiss cheese
4 slices Cheddar cheese
1 1/2 tsp. Chives
4 each Eggs
1/4 cup Milk
to season Salt
to season Fresh ground black pepper
as needed Canola oil for frying
to garnish Confectioner's sugar
for service

Macedoine of Fresh Fruit (assorted diced fresh fruit)

 



METHOD
1. Combine eggs and milk, season with salt and pepper. Whisk until well mixed. Place enough oil in a deep-sided sauté pan or skillet to fill by 1/3. Heat over low flame. Spread softened butter on bread slices and sprinkle with chives. Place Swiss cheese on four of the bread slices. Top with sliced ham, cheddar cheese and remaining bread slices. Insert three toothpicks in each sandwich to secure dividing it into three equal sections. Trim crust if desired. Slice each sandwich into three pieces. Dip each piece into beaten egg mixture and shake off excess.
2. Carefully place into hot oil. Fry until golden brown on all sides. Remove and place onto paper towels to drain. Cool slightly and remove toothpicks. Place on serving plates and dust generously with Confectioner's sugar. Serve with Macedoine of Fresh Fruit.
