INGREDIENTS 4 SERVINGS
3 cups fresh strawberries, hulled and sliced
1 cup sour cream
1 cup heavy cream
1/3 cup orange juice
1/4 cup honey
2 tsp. mint leaves, minced
4 oz. champagne
4 each fresh strawberries
4 each fresh mint sprigs



METHOD
1. Strawberries, sour cream, cream, orange juice, honey and mint in a blender or food processor. Puree until smooth. Stir in champagne.
2. Taste for sweetness, if necessary add more honey. Chill soup. Portion soup into chilled serving bowls. Garnish with strawberries and mint sprigs.
