| METHOD |
| 1. |
Strawberries,
sour cream, cream, orange juice, honey and mint in a blender
or food processor. Puree until smooth. Stir in champagne. |

Taste for sweetness, if necessary add more honey. Chill soup.
Portion soup into chilled serving bowls. Garnish with strawberries
and mint sprigs. |
