INGREDIENTS 4 Servings
1 1/4 lbs. Turkey breast meat, cooked, cut into strips
1 cup Orange wedges
1 cup Celery, thin bias cut
1 cup Carrot, julienne cut (thin strips)
1/2 cup Raisins
1/3 cup Toasted sliced almonds
1/4 cup Scallions, minced
6 - 8 Mint leaves, minced
1 tsp. Cilantro, minced
4 each Red leaf lettuce leaves

For the Orange Curry Dressing:
1/2 cup Mayonnaise
1 tsp. Orange zest
1/4 tsp. Fresh ginger, minced
2 tsp. Honey
1 tsp. Red wine vinegar
1/2 tsp. Soy sauce
1/4 cup Orange juice
to season Salt
to season

Fresh ground black pepper

 



METHOD
1. Prepare Orange Curry Dressing by combining ingredients in a mixing bowl. Season to taste, reserve. Place turkey, orange wedges, celery, carrot, raisins, almonds, scallions, mint leaves and cilantro in a large mixing bowl. Add dressing and toss until ingredients are well coated with dressing. Place red leaf lettuce on chilled serving plates and top with Orange Curry Turkey Salad.
