INGREDIENTS 4-6 Servings
2 1/2 cups Fresh strawberries, stemmed and halved
2 cups Fresh blackberries
2 cups Fresh raspberries
1 1/2 cups Fresh blueberries
to garnish Sweetened whipped cream
to garnish Mint sprigs

For the glaze:
2 1/4 cup Apple juice
1 each Cinnamon stick
pinch Ground clove
1/4 cup Cornstarch

For the streusel topping:
1/2 cup Brown sugar
1/2 cup Oatmeal
1/4 cup Flour
1/2 cup Toasted sliced almonds
1 tsp. Ground cinnamon
2 ozs. Butter, cut into small cubes



METHOD
1. Preheat oven to 350 degrees F. Prepare fruit glaze by placing 2 cups apple juice, cinnamon stick and ground clove in a saucepan. Bring to a simmer. Combine remaining apple juice with cornstarch to create a "slurry". Add slurry to simmering apple juice. Reduce heat and whisk. Cook until mixture becomes very thick. Remove cinnamon stick and cool.

2. Prepare streusel topping by combining ingredients in a bowl. Mix with hands until mixture turns into "crumbles". Reserve. Combine berries with glaze. Portion glazed berries into 8 oz. baking dishes. Top generously with streusel topping. Bake at 350 degrees F for 15 minutes or until streusel topping is golden brown. Remove and cool slightly before serving. For service, top with whipped cream and garnish with mint sprigs.
