INGREDIENTS 4 SERVINGS
4 each snapper fillets, 6 ozs,
1 tsp. cooking oil
to garnish red and green bell pepper, finely diced
as needed creole mustard sauce

For the Cajun Spice:
1/2 cup paprika
1/2 tsp. cayenne pepper
1 tsp. black pepper
1/4 cup thyme leaves
1/4 cup oregano leaves
2 tsp. granulated garlic
1/4 cup

salt

 



METHOD
1. Prepare Creole Mustard Sauce per recipe, reserve. Prepare Cajun Spice by combining ingredients and mixing well. Dust snapper fillets with Cajun Spice.
2. Heat cast iron skillet over medium high heat until very hot. Add oil to hot skillet along with snapper fillets. Allow snapper fillets to blacken. Turn over and cook through. Place blackened snapper fillets on warm serving plates or a platter. Top with Creole Mustard Sauce. Garnish with diced red and green peppers.
