INGREDIENTS 4-6 SERVINGS
4 each Russet potatoes, peeled and grated
1 each Onion, medium, grated
1 each Large egg
1 tsp. Parsley, chopped
pinch Ground nutmeg
1/2 cup Matzo meal
2 tblspn. Vegetable oil
1/2 tsp. Salt
2 -3 twists Fresh ground black pepper
as needed Vegetable oil for frying
for service Applesauce
for service Sour cream
to garnish Parsley, chopped



METHOD
1, Combine grated potato and onion. Place in strainer or colander and drain well. Place potato and onion in a mixing bowl. Add egg, parsley, nutmeg, Matzo meal, vegetable oil, salt and pepper. Mix well. Heat oil in a fry pan over medium low heat. Form "cakes" with potato mixture andcarefully add to hot oil. Fry Latkes for 4 -5 minutes on each side until golden brown. Remove and drain on paper towels. Transfer Latkes to a warm serving platter and garnish with chopped parsley.

Serve with Applesauce and sour cream.
