INGREDIENTS 6 Servings
2 1/2 lb. Sweet potatoes, peeled, quartered
6 oz. Butter, cut into small pieces
1 cup Milk
2 each Medium egg yolks
6 each Cooked sweet potato slices, 1/4 inch thick
pinch Ground nutmeg
to season Salt
to season Fresh ground black pepper



METHOD
1. Preheat oven to 400 degrees F. Place sweet potatoes in a pot and cover with water. Bring to a simmer and cook until tender, approximately 15 - 20 minutes. Heat milk and butter in a small saucepan. Keep warm. Drain cooked potatoes well. Press through a mill or ricer, place in mixer bowl. Add milk / butter mixture, egg yolks and nutmeg. Season with salt and pepper. Mix until well incorporated. Place cooked sweet potato slices on a lightly oiled baking sheet. Transfer sweet potato mixture to a pastry bag with a large star tip. Pipe sweet potato mixture onto sweet potato slices. Bake Duchesse Sweet Potatoes at 400 degrees F until golden brown (about 15 minutes) Transfer to a warm serving plates or a platter.
